Instructions:
1. Prepare the Crust:
Preheat the oven to 325°F (163°C). In a bowl, mix crushed graham crackers, sugar, and melted butter (plus honey or maple syrup if you prefer a natural sweetener). Press the mixture firmly into the bottom of a greased springform pan. Bake for 10 minutes, then let it cool.
2. Make the Cheesecake Filling:
In a mixing bowl, beat the cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract, sour cream, and cornstarch. Pour the mixture over the cooled crust.
3. Bake the Cheesecake:
Place the pan in a water bath (a larger pan filled with hot water) to prevent cracking. Bake for 35-40 minutes, or until the center is slightly wobbly. Turn off the oven and let the cheesecake cool inside with the door slightly cracked for about an hour. Then refrigerate for at least 4 hours, preferably overnight.
4. Prepare the Strawberry Topping:
In a saucepan, combine strawberries, sugar (or honey), and lemon juice. Cook over medium heat until the strawberries soften and release their juices.
